I normally use supercook marzipan but it doesnt really taste that marzipanny to me (and I love proper marzipan) any ideas for some decent stuff please

Sorry but you are going to have to make it. The bought stuff is nasty nasty nasty. I thought I hated it until my mum made me have it on our wedding cake. Her friend made it and it was so lovely.

It's very easy to make:
300g ground almonds
300g icing sugar
3 egg yolks
juice of 1/2 a lemon
1 tbsp brandy

Blend in food processor, or mix by hand until 'breadcrumby'. Then knead together and roll out.

Bramshott - how long will it last? I'm a bit worried that it might get all salmonellish. Thats the only thing that holds me back from making it.

that really is easy isn't it? I'm buying for the cakes I give away but will make it for mine then.

Amaretto instead of brandy in my cakes though... that should do in the marzipan wouldn't it?

I think as it air dries, it's probably fine, although I guess you shouldn't have it if you're pregnant. Ours is around for at least a month and it's fine.

Cool - well as you haven't been struck down then I spect its ok grin
I suppose the brandy and lemon would kill off the germs and then unless it gets contaminated by an outside source it should be fine.

Am going to be brave. I want the real stuff!
