Help me find this 90s book

I've been trying to find a book that I loved when I was younger and am posting in the hope that someone might have an inking as to what the book was called, I can't remember at all and it's driving me crazy.
It would have been very late 80s or early 90s, I guess aimed at pre-teens. I remember that it was set in Japan, possibly in the future, and the family were having to go and live in space as Earth was becoming uninhabitable (I think). I remember the book had a short title (something like Fuji) and the cover was of a Japanese landscape, possibly a mountain with pinkish colours and the title was in shiny red.
Any ideas what this book is called anyone? Sorry to be totally vague.

Although I think it was set in the US.
