I have a cupcake recipe that makes about 10 cupcakes, if I want to make 20 is it better to make 2 separate cake made x batches? or can I put dou me of everything in 1 bowl? will I get the same result if I do that?
Just double it and make sure that it's mixed really well (til it changes colour and is clearly lighter and smooth) and it will be fine.
I've made massive mixes before and the only issues are whether the mixer can cope with that amount of mix and whether you will be able to bake the cakes you've mixed quickly enough without spoiling their rise.
