Stollen-light - a festive colourful Christmas loaf

There's still time to make this dead easy Christmas loaf.

It's very versatile - if you don't like marzipan, use yellow apricots or peach slices or pineapple chunks.

I made a yeast-free version yesterday, using a spicy fruit soda bread to wrap the marzipan and cherries. Turned out absolutely fine!
