Hi, wonder if any baking experts can help? I need to make a Madeira cake for the top tier of a christening cake. The tin is 7inches wide. Can anyone give me the best quantities for that size tin, I want the cake to be reasonably deep. Thanks!
2 1/2" = 3" deep cake at 7" square would be a 4 egg mix, and for 7" round, a 3 egg mix. For each Medium egg, 2ozs SR Flour, 1oz Plain Flour, 2ozs Caster Sugar, 2ozs Butter, 1 tsp Lemon Juice, Zest of 1/2 Lemon.
