I'm looking to send something yummy in for the teachers staff room this week - cookies, brownies, shortbread etc.

I have most ingredients (eggs, flours, sugars, vanilla, cocoa etc), except I only have Stork and don't want to go to the supermarket just for butter.

Any good recipes which you can share?

I thought of some kind of sponge tray-bake, but if left on the side all day I imagine it would go dry (unless someone takes the time to cover the remaining over, which I can't guarantee will happen)?

Any ideas gratefully received!
