I did use butter when we opened but it's quite heavy and the sponges tend to be lighter with marg.

Canyou not use butter? Or does that not bake well?

Hi there I feed a lot of Mums and their children in my coffee shop. I have always taken care to use the best ingredients ie. free range eggs and margerine free from trans fats. However recently the marg has had the free from Hydrogenated fats removed from the label. This is freaking me out, is all margarine hydrogentated? Or just some, does anyone know, this used to be big news now it seems to have lost its importance
