It should work OK, but might not be very strong.
I'd put a couple of tablespoons in the cake mixture, and then if you make glacé icing, just use sugar and lemon juice, if you make buttercream, add lemon juice to loosen it off a bit, but don't put in too much.

Real lemons are best as you can add some zest, but can't see why it wouldn't work if thats what you've got in - and anyway, you'll get plain sponge if the tasta cooks out!

.....can I use this juice to make lemon cupcakes?? Should I put it in the icing or the cake mixture? and how much should I use???
