How do you weigh sweetener instead of sugar???

Hi, I just wondered how you would use sweetener in a recipe. It weighs a lot less than sugar, so I wouldn't be sure how much to use in say cakes.
Cakes are a massive down fall for me, so if I could make a sugar free one with wholemeal flour it would be great as a treat. smile

I wouldn't bother - sweetner never tastes as good and wholemeal flour still very high GI so not much better than sugar. You end up with something that doesn't taste very nice, and isn't very healthy. If you want a treat have your normal cake which at least tastes nice but have one slice!

Or try this - mix 3 mashed bananas, 2 cups oats, 1 cup soaked raisins, 1 teaspoon vanilla and leave for 30 minutes and then bake into biscuits.

Drain the raisins before adding, just soaking them in boiling water first makes them much more moist!

It should say on your tub of sweetener how much you need compared to sugar in a recipe. Think they are all slightly different. I always check on my tub before using as I don't always get the same one!

When I cook with sweetner I always cook in ounces and go by 1 tablespoon is 1 ounce - but then I tend to cook always like that and don't measure things majorly accurately. Use the same number of tablesppons of sweetner the recipe says to use sugar.

Be aware tho when cooking with sweetner as it doesn't have the same properties as sugar so cookin times and textures may differ.
