reheating frozen baby food ... sorry a hundred times over for such a daft question...

..but I don't have a microwave and I've just got to the point of needing to introduce chicken/meat/fish into DS's diet....Whether I freeze small portions of our own dishes for him, or do some Annabel Karmel-type portions for him specially,what's the safest way to go about serving them up to him, in terms of food hygiene? With my frozen fruit and veg purees, I've been defrosting them overnight in the fridge and then just standing them in pots of warm water to take the chill/edge off them before serving them up. He's been more than happy with lukewarm/room temperature food but, with something like a chicken dish, I guess I should be defrosting it in the fridge for as long as it takes to fully defrost and then heating it to piping hot in a pan, and then cooling to a temperature he can take?

Cheers..I know it all seems obvious really but you know how you can suddenly lose confidence when it feels as if you're just making it all up as you go along...and I really wouldn't want to poison the poor little mite!
