Nightmare at meal times - advice welcome

Hi, my DS is 2.5 and is a nightmare at the table. He refuses to eat with anything other than his hands and throws his food all over the place.
Techniques I've tried so far are:
Removing him from the table
Removing his food
Telling him off
None are working.
We always eat our meals at the table together and have since before he was born. I don't understand where he's getting it from and haven't had to deal with the problem before because his older brother who is 4 eats with fantastic table manners (he always has) so would appreciate some advice - there's only so many time I can clean beans off the ceiling without turning to the wine

I should also mention that I am not a wildly adventurous cook so most of my meals are tried and tested and he definitely likes them xx
