I've promised to make a cake for a get together this Friday. It needs to serve 8. Has anyone got any nice recipes for a cake suitable for a diabetic? One of my friends has type 2 diabetes, only recently diagnosed and I'd like to make something lovely that we can all enjoy. TIA
Use sweetener instead of sugar? Could make a plain Victoria sponge with strawberries and whipped cream? I'm also type 2. My dear mum makes it for me as s birthday cake hope this helps.x

The Splenda website used to have some good cake recipes on, not sure if it still does.
Thank you Red velvet cakes turned out ok. Victoria Sponge was as flat as a pancake!
