Baking breakfast breads - timings query

I got a bread baking book (Mr Hollywood!) for Christmas which has some lovely breakfasty recipes that look tempting. But .... Taking into account rising times etc you're looking at over 3h from flour and yeast to lovely loaf.

Does anyone make these and if so, how do you do it? Start the night before? I don't want to get up at 6 to slave away on a Saturday breakfast smile

I hate mornings... but love baking bread. I very often prove overnight, in the rather cool kitchen.
