we have a short one syllable surname & struggling with a good first/middle name match.

Not just Ellie as you have the option of shortening to Ellie with Eloise anyway.

Ellie has been done to death
Imogen I really dislike this name, but am in the minority as everyone seems to love it
Abigail will probably be Abbey
So I'd go for Eloise out of your options but I don't like the mn you picked to go with it. Also Eloise will end up another Ellie

May is SUCH an overused middle name (along with Rose and Grace) of be tempted to avoid it entirely.

Think i may have to disappoint family & choose my own middle name as i'm not sure on them either :( may has been passed down but my mum didnt use it with me so might just be selfish & pick my own.... although that could take a while to decide too haha

Eloise Josephine is lovely. May has a nice sound, but has been done to death in recent years. Imogen and Abigail are also lovely names.

Ellie sounds quite nicknamey and 'little girl-y' and has also been done to death. You could use the nickname 'Ellie' from Eloise anyway, as pp pointed out.
