Why do I keep getting rv that's not chocolate but just cake with red food colouring?

My local bakery (which looks like it belongs in the 1970s) has one in the window which is basically a Madeira with a dribble of red food colouring in it. It looks like the chef had a nosebleed Grin

Water icing =/= frosting though... Buttercream is the equivalent there.

Red velvet cake is chocolate cake, with red food dye, its method of preparation is different to standard cakes making the cake extra moist, my DM makes some lovely red velvet cakes

RV cake should have cocoa powder and buttermilk in it - not just red food colouring...its the chemical reaction that makes the red colour

Real red velvet cake shouldn't have food colouring of any type (artificial or beetroot) it's an American cake made with a specific type of Dutch cocoa powder. Definitely cream cheese frosting though! Neros do good red velvet cake!

My red velvet has cocoa and buttermilk and vinegar in it and is to die for (American recipe). However, it's very hard to get it properly red in the UK with anything but liquid food colour - easier in the US because the E numbers banned by the EU are still available there.

The English cheesecake company sell a red velvet cheesecake that looks screen licking good and has a chocolate layer but somehow it's the profiterole truffle one that ends up in my basket. Grin

I've tried a few red velvet cakes and they've all been disappointing. I've tried making my own but they never taste as good as they look.

I LOVE red velvet. It's also ds1's favourite. It definitely tastes of chocolate. Doesn't it have vinegar of some kind in it?

For the frosting, use full fat Philadelphia only, and whatever you do use it from the fridge (not room temperature). It's another thing that's different stateside.

You can make cake flour by mixing normal flour with cornflour.
