To hate vegetables

Not quite all, but most.

Anyone else? I know they are so full of goodness but most I can barely bring myself to eat.

Odd, certainly, but if you don't like the taste you don't like the taste. No need for a big debate over it, is there? That's more irritating to other people than the fussiness itself, IMO.

The only thing I would add is that there are an awful lot of vegetables, that can be cooked many different ways.

Maybe you just haven't found your favourite yet?

We all have different tastes, it's not unreasonable. I can't stand fruit, any fruit. Tried just about every kind there is and would rather just not bother with it. I do like vegetables however, especially fried aubergine and lots of mushrooms!

It's more green veg I can't stand. I know that's the really nutritious and low calorie stuff, though.

Mushrooms are ok, sweetcorn, red and yellow peppers (not sure if this is fruit) carrots, sweet potato, onions.

Do you like salads, OP? If you haven't experienced any problems with not eating much veg health wise, then it's not an issue. But personally I couldn't survive without veg.I prefer it to fruit, and it's more nutritious than fruit as well

I don't really like salad at all. I will eat lettuce (but even that is as a nod to something green) and that is more or less it. Red onion too.

Have you tried various ways of eating it? Are you trying to eat it plain or with flavours added?

Courgette boiled would be horrid for example, but was lovely this evening fried in butter, garlic and lemon, with some chopped spring onions

I love vegetables but I hate fruit so I can understand where you are coming from. Nice to see that a couple of other people don't like fruit either.
I like raspberries and strawberries but that is it. Loathe bananas. Hate apples with a passion. The list goes on...

I hate the texture of courgette. I know what you mean about different flavours - I can force down some spinach if mixed up with creamy mash.

But I CANNOT touch

Cucumber
Sprouts
Broccoli
Green beans
Peas
Kidney beans
Tomatoes
Green peppers
Beetroot
Courgettes

YANBU, everyone has different tastes and what is the best meal for some people will be hell on a plate for others.

I'd suggest you take a good multivitamin daily to make sure that your lack of veg doesn't affect your health - and it probably wouldn't be a brilliant idea to go vegetarian ;)

(I was a vegetable-hating vegetarian for 6 months, it didn't end well)

Yanbu but it is a shame because there are so many ways to prepare veg so that it is nice! And the nutrients are important...
Have you tried honey roasting carrots/parsnips for the sweetness?
Minted peas?
Courgette fried in garlic or even with breadcrumbs?

I would say it's worth persevering for the health benefits

My DH's range of vegetables he will eat is very similar to yours and he manages as a vegetarian!

He'll eat all the things on your "ok" list except sweetcorn which is "of the devil" apparently, and from your "terrible" list he's happy with courgette, and will accept occasional small quantities of cucumber, broccoli and tomatoes but will agree with you on all the rest. Left to his own devices he wouldn't have a range wider than peppers onions and mushrooms but expands from this for my sake.

Given that your tastes are broadly similar to his, you may find a few others that he'll tolerate worth a try:

We regularly have either savoy or cavolo nero cabbage finely shredded and steamed and combined with sautéed leeks in mashed potatoes for a delicious colcannon

Aubergines are great if cooked well - there are many people put off from aubergine by bad cooking so they are worth trying done in different ways.

What do you think of mangetout? Asparagus?

You say you'll tolerate lettuce but perhaps try some different flavours of leaf like rocket or watercress?

Given that you like carrots and red onion, try making a coleslaw with these plus red cabbage?

I don't think your range is too bad but it would be a bit dull trying to get your "five a day" with a choice of only 6 types of vegetables so if you could get your range up to 10 that would be a bit better. You maximise the health benefits of eating vegetables by "eating a rainbow" because different colours are a general indication of different trace nutrients so focus on adding things that are different shades to items you already eat.

The only veg I eat on a regular basis are;
Sweetcorn, carrots, peppers, cooked onions, chopped & cooked tomatoes (hate them raw), cooked celery in sauces, sweet potatoes which is not a big range but I find I'm healthy enough. Eat fruit, nuts, beans and meat in addition.
