Doesn't CO2 accumulation enhance virulence in candida? I may be misremembering that. I hope she mad sure her bread was baked through properly just in case.

Oky, speaking against the grain, I quite like it.
I like it as an idea, as a sort of scientific experiment.
I hope nobody ate it though.
And it is a bit weird to publicise it, but all in the name of science I guess...

Candida is the wrong yeast to use for bread baking, she would have been better of finding some rotting fruit with Saccharomyces. But as a microbiologist I kind of like it as well. Many strains have been isolated originally from fairly yucky sources. Some Candida species are used in cheese fermentation.

But....but....it's sourdough! You don't need yeast. You also don't need fanny juice to make your own starter! All you need is flour and water.
