Allergies and intolerances

Any tried and tested recipes for dairy and wheat/gluten free English muffins please?

We've pretty much mastered the gluten and dairy-free bread making, but wondered if someone had a recipe for muffins for toasting please?
We've had a browse through the AiA cookbook, but it doesn't seem to have what we're looking for.

ROFL at "I mainly pretend she says 'the wheat-free flour you have in the cupboard". A lot of our cooking relies on this assumption/hope.
I will have a rummage on Amazon for the book you recommend - the spring roll wrappers would be VERY popular in this house!

luckylady - thanks for the info. We have had those in the past, and the DSs love them toasted, but I wanted to try and make them ourselves, as the Tesco ones contained a few ingredients that I'm not too keen on.
MIF - I'll search out the book today and let you know if I track it down.
