Hi all, here is a cake recipie that we used for my DS as a birthday cake. It's dairy, egg, and nut free. I know it says cup of warm milk but we just used water, though I guess you could also use any other milk replacer. We used pure sunflower. It's not your traditional cake but with some icing on top with a candle my DS had a proper birthday cake for the first time.

Ingredients

  1. 2 ozs Sugar
  2. 4 ozs Dried Fruit (Mixed)
  3. 2 tspoons Mixed Spice
  4. 3 ozs Margarine
  5. 1 cup water (one of small dumpy mugs would be about right)
  6. 8 ozs S.R.Flour
  7. 1 Tblspoon Syrup (measure carefully)
  8. 1 and a half level tspoons Bicarb of Soda
  9. 3 Tblspoons of warmed milk (I think you could used warm water instead)

Method
Put ingredients 1-5 in a large saucepan, disolve sugar and marg (Low heat) bring to boil and simmer (high then low heat) for five minutes. Stir occassionally with wooden spoon. Remove pan from heat.
Fold into mixture ingredients 6 & 7 until texture is smooth.
Mix ingredients 8 & 9 together and stir into mixture.
Grease and line a 16cm across x 7cm high (small round) tin.
Cook in centre of oven until knife comes out clean, approx 1 hour on 160 degrees.

This cake is moist for a while but when a day or two old you can eat it with butter on it :-) yummy, for pack ups
