If I was, I'd prep then cover in water and put in a Tupperware in the fridge

Unless you mean you're parboiling potatoes etc? In which case no water but in tupperware in the fridge

Parboiled in trays in fridge. I usually put fat on now, but I haven't this year.

Carrots in tupperware box in fridge, with a splash of water.

Brocoli and sprouts just cut, and in fridge.

I cook the roasties and then leave them out uncovered - will blast them in our titchy oven tomorrow when we take the turkey out (saw it on a cookery prog years ago... It works)

Dp has been prepping all day. The sprouts are peeled (but still raw) in a glass bowl cling filmed.
Potatoes have been parboiled and on a tray clinged.
Parmesan parsnips are ready on a tray ready to shove in the oven. Clinged.
Cauli cheese is prepped and in an oven dish also clinged.
Yorkshire batter is in a pampered chef batter bowl with a lid on.
Pigs in blankets are rolled and on a baking tray with, you guessed it, cling film covering it!
We have got a big American fridge freezer so there's plenty of room.

Prepped vegies can be left out of the fridge overnight in water.

They are vegies, not meat! Grown in the ground or on vines. Not likely to have crazy amount of bacteria from one night out if the fridge.

Obviously not vegies with cream/cheese etc.

Potatoes are peeled and in a huge pan of cold water in the garage. Same for the sprouts. Only because they're the two things I hate preparing the most.

cauliflower, broccoli and parsnips are chopped and in the fridge.

And Aunt Bessie has made the carrot and swede mash.

All meat is prepped and in trays in fridge covered in foil. Veg all chopped and in pans/bowls with water and foil.
Trifle is made and cheesecake done. Both in fridge!

My parboiled potatoes are still on a baking tray in the freezer. Am I doing it wrong?

In water, but make sure you put plates on them to stop the floaty top veg drying out. They must stay under water.

dar I think they can go straight isn't the oven like that can't they? Don't know, never done them from frozen before but imagine they'll be fine.

We've got a 9 week old sucking my nipples for dear life while DH and one handed me did the following today -

Potatoes parboiled fluffed, air cooled and in fridge bag in fridge

Carrots and 'snips barely parboiled in chicken stock, air cooled and in fridge bag ready to roast with garlic and herbs

Tender stem broccoli blanched and similarly bagged and in fudge to stir with bacon lardons and cream
