Ideally real Australian stores that do vouchers or delivery, rather than just e-vouchers.

I've bought dsis things from etsy. You can search for sellers in Oz or who ship there.
Because its Independent crafty people it's always beautifully wrapped aswell (she tells me) :)

Australia post will mail out vouchers for myer etc if you want a department store. You can organise that online. David jones will often post things if you call them.

For books, readings.com.au will send a voucher that can be used online or in person (or they will send books too, of course.)

Lots of toy stores (entropy, iqtoys, honeybee) offer delivery and some will do vouchers.

Discount stores (bigw, target) have a smaller range of things online, but ordering is fairly easy.

Dymocks is an Aussie bookstore. Prepare to be Shock at the prices though, you would probably be better off buying from The Book Depository or Amazon (Book Depos has free delivery).

this is a lovely Aussie company run by 2 mums who make really nice jewellery.

Can you give us an idea of where in Oz your friends are and what age you're looking to buy for?
