What to do with left over goose?

Ideas please? Goose stew and cold goose don't sound too appealing!

Some ready made shortcrust pastry, bake it blind (with some dried beans in the base) for 20 mins or so, chop some veg and steam for 10 mins, some gravy with a dash of port, put the left over (cooked) goose inside, put the top on, a quick egg wash and into the oven for 20 mins. I'm not 100 certain of the timings though.

Cassoulet - a sort of stew with beans, sausage and goose or duck. Makes the left over goose go a long way and is delicious.

Cold goose is georgous with jacket potatoes, and a lovely salad.

Have you done goose before? How many are you serving? We are doing goose for just us 4, I expect very little leftovers. It looks big but an awful lot of fat emerges.

Cassoulet is so yummy! Or a Chinesey duck type salad with rice noodles etc? Think Nigella has a recipe online for something similar

How big is your goose, Noopy? How many are you feeding? Agree with previous poster that you don't get many leftovers!!

Errm blush not sure how heavy the goose is, we need to weigh it later! I asked for one big enough for 4 plus left overs. Some nice ideas here, the port pie and the cassoulet are my favoured ones at the mo.

We don't often have enough for leftovers tbh even with a massive one there is not lots of meat on it

Well, we ended up with a fair amount of left overs. We ended up going for cassoulet. And very good it was too!
