iTunes accounts for older kids/teens?

I wasnt sure where best to put this but at least I know Christmas is a busy forum at the moment so I hope someone can help me with this! I'm getting my 11 year old an ipod touch for Xmas and his 13 year old sister is having a hand me down iphone 3g from her Dad but I don't know what to do about itunes accounts. Can you open them for children or do they have to be linked to a credit/debit card? Obviously I have my own account that dh and I share but the kids are getting itunes gift cards for Christmas and I don't want to spend their credit if I just link their devices to my account and if I open accounts for them and have to use a card how do I prevent them accidentally using my card for purchases when their gift cards run out of credit.
How to others with older kids/teens with itunes manage it?
I can't find an answer on the itunes website. Of course if you don't need to add a credit or debit card then problem solved but I can't seem to find an answer to that question lol.

we have one account for both ipods, have never attached my card to the account, have always bought cards. i know an ipod can only be linked to one itunes account though, so they really need to share an account, so they only need to buy one app and both can have it, instead of one each of the same, because they have seperate accounts.

You can open an account without linking it to a card, but it's not obvious from the website. You have to go to i-Tunes, click on one of the free apps, then it lets you create an account without having to put a card number in. You can then load credit to it, either monthly, or in one off instalments, or they can put in voucher codes. This is what we did for my son.

If you buy an itunes voucher, you can put it directly into the ipod touch. Once its set up to itunes, click onto itunes directly from the ipod. Scroll down, at the bottom it says redeem voucher. Once you redeem it, it can only be spent PB that device even if you share itunes on the pc.

Not sure if this works for iPhone.

DD3 often has ITunes vouchers for Christmas she puts those onto her account.

She spends them on the computer as she hasn't got an iPod touch just a nano. I also have an iTunes voucher on my account and do have a touch. I have spent it both on the computer and the device.
