I have got a massive piece of pork in my freezer

Bloody tesco, I ordered a 1.5 kg bit for us to have one Sunday for a roast and they sent a 4kg bit with "serves 19" ont eh frontHmm. Anyway, I ahve decided we will ahve it at christmas. My plan was to take it out today to defrost, cook up tomorrow. Then ahve some heated up with the turkey, then cold Christmas night and boxing night, but how much longer after Boxing Night will I be able to use it?
Am always wary of keeping cold meat for too long

Could you cut it in half and freeze some?

I reckon three days is about the max for leftover roast meat. Four if it still smells and tastes ok. Do make sure you reheat it really really thoroughly.

Cold roast pork is fab though.

It has already been in freezer, thats the problem. Unless we have some tomorrow night with mash and veg, then the rest as planned! Angry at tesco

My plan would be to roast the whole joint as you plan to tomorrow, then when you've had your hot meal, cut off as much as you need to eat cold for Christmas and Boxing night, and freeze the rest sliced in gravy, in family sized amounts. Label 'Roast Pork in gravy for 4' or however many. You can use these in the New Year for quick dinners. Make lots of gravy when you do the initial roasting, and reheat the thawed frozen meals very thoroughly.

I have a 6lb 5oz chicken when I ordered a 5lb one from the butcher! This is for just the two of us. The excess will be curried and frozen. We may yet be sharing it with my friends if they can't go to her brother's; she has just told me her partner has hurt his back, so if he is unable to travel I've said they must come here.

Ooh if you cook it slow for 24 hours it will be gorgeous and you can switch off your heating in the kitchen for the day! It falls apart with forks and is divine. I would say it would keep refrigerated at least 3 days.
