If I bake a sponge cake and cover in in butter cream, how many days will it stay fresh for? Could I cook tomorrow to eat Wednesday. I'm thinking of a victoria sponge rather than a madeira. Anyone know?

If the sponge itself in an airtight container it should just about last. Wouldn't leave buttercream icing around at room temperature for that long though - can you make both, keep icing in the fridge and do the assembly on Wed?

It definitely won't go off - and in fact even the butter icing would probably be ok - depending on the temperature - it's pretty cool where I am at the moment. Except in the height of summer we keep our butter dish outside the fridge, as otherwise it's unspreadable, so it's often out for days on end and is fine.

Having said that - making butter icing and keeping in fridge and then reassembling on the day probably makes life easier. Just make sure you allow LOTS of time for the icing to come to room temperature and be spreadable - i.e. several hours, depending how warm the day is.

Anyway - as for super freshness, well if you're being fussy, cakes are usually at their absolute best on the day they're made. But just make sure it's in a really airtight container, and maybe even for security, wrap in foil or similar.
