we did exactly the same this week

roasted chicken had legs with salad
breasts chopped up to have risotto
carcass made stock for chicken soup. with left over meat.

I often roast a chicken

or,as yesterday, spatchcock it (cut the backbone out and flatten it) and cook it on the bbq

then tear it up and put it on a simple bed of green salad wtih some of that balsamic glaze you can buy in the supermarkets

yummy with coucous or jacket potatoes

got a chicken out of the freezer yesterday but ended up having a bbq instead. but have decided to cook the chicken anyway and make it into salads etc as it's going to be nice weather this week anyway.

so need lots of good ideas of what to make.

can make coronation chicken but tbh I'm personally not that fussed on it, so anything else salad wise?
