Basically I have carrots, cabbage, broccoli, leeks, potatoes and beetroot. Now the weather is better I don't really fancy them what can I do to make them more summery!

Carrots and Cabbage make a coleslaw. ( you could throw in a few leeks as well) Pickle the beetroot (!!!!). Make a potato salad with mint and chopped bacon .
If you have a bbq then you side dishes are prepared.....Erm not too sure about the broccoli though.

oh I eat what I fancy whatever the weather

but I dont see whats not summery about those veg!

beetroot goes in saladsa nds shandwiches
raw carrots
pasta with cabbage and pancetta (just yummy wheatever weather)
leeks in cheese sauce to jazz up any sausagey meal

Make a soup but have it cold with bread - yum to dunk bread into if it's really thick.

I share your pain! I made some samosas the other day, with grated carrot and potato (plus turkey mince, curry powder and peas). I find spicy food summery. I also made a Leek and cheese pie with the left over filo pastry, but you could make a quiche?
Cabbage is good in stir fry, as is broccoli. Beetroot is lovely cold as a salad.
Sausages, jacket potatoes and broccoli on the menu tonight!

I would just do a huge vegetable soup to get rid of them. freeze it if you don't want it and start your shop again! Or make coleslaw with the carrots and cabbage, potatoes for potato salad with cubes of beetroot and mayo/vinaigrette.

thanks. Hanaflower think the menu here could be the same. My prob is I fancy eating stuff that hasn't actually grown yet but thats my fault for trying to eat seasonal stuff

Grated carrot and apple - lovely. Add cabbage to taste.
Broccoli fine in this weather surely - or eat raw.
Make some borshch and freeze for wet and chilly days.
Or grate the beetroot into salad.
