Cause ds1 had them at a hotel not too long ago and loved it. It was cut up and I don't know what... steamed? fried? How do you cook? How do you cut up? Do you have to skin?
Peel, chop or slice & boil or steam until soft. If he had them in cubes & liked them leave them as they are, but they can be a bit watery. I prefer them mashed with a bit of butter.
A swede, whilst orange on the insode, can have a purpleish skin. Mashed is best. You can also put chunks into a slow cooker type meal. My parents would always mash swede together with the potato.
I have the most mazing recipe from cranks for 'stoved turnips'. but I've always used swede, it's truly delicious, will search t'internet as wine brain procludes typing recipes................damn damn damn, not there.....here goes, please please try it, it's so good, it's almost mystical, so much greater than the sum \of it's parts:
1 onion 3 oz butter 14fl oz water pinch marigold stock powder 2 fl oz white wine 1/2 teaspoon marmite 1 sprig rosemary 1 clove garlic 1 birds eye chillie chopped v small 1 oz cheddar (optional but delicious) salt and pepper 1Kg Turnips or swede
peel swede or turnips, cut in to big (4cm)chunks Fry the onion in a sauce pan, in 1 oz of butter until brown, add turnips or swede, cover with wter, stock powder, wine, marmite, remaining butter, rosemary and garlic, salt and pepper.
Cut a circle piece of greaseproof paper to fit inside the pan, and out it inside the pan on top of the turnips. Bring to the boil for a couple of minutes then reduce heat to a gentle simmer. Shake pan so turnips don't stick to bottom, Cook untilturnips cooked through.........20 mins? Remove from heat, add the chillie, then add the grated cheddar
glazed turnips are to die for! (swede is good mashed or roasted or you can even make chips out of it!).

Serves 6:
3 cups of chopped turnips, cut into small chunks 2 tablespoons butter 1/2 small onion/1 shallot 1 tsp sugar 1/2 tsp liquid stock concentrate or half a stock cube crumbled (recipe specifies beef bouillon but I've made it for veggie friends with a tsp of Knorr liquid veg bouillon and it's been fine) 1/8 tsp paprika
steam or microwave the turnip chunks til tender (takes about 7 mins to steam), drain.
Melt the butter in a heavy based frying pan, add turnips & onion/shallots, saute til onion is limp.
Stir in the rest of the ingredients (sugar, stock, paprika), coating all the turnips and saute for another 2 mins or until nicely browned and resembling mini-roasties.
my DF dc love it cut in chunks, same with carrot, boil it until soft, then quickly toss it in a pan with a little bit of melted vitalite marg and a little sunflower oil, with corriander and garlic nice with sunday-roast type meat (tends to be ham or beef) or chicken, and mustard mash yummmmmmmmmm <dammit i'm hungry now.
