Ingredients

Approx 4 slices of bread
2 eggs
1 tbsp milk
100g soft cheese
1tbsp tomato puree
Butter or oil for shallow frying

Method

Beat together the eggs and milk.
Dip the bread slices into the mixture and shallow fry gently in a little butter or oil, until browned.
Mix together the soft cheese and tomato puree until smooth.
Serve the soft cheese mixture in egg cups, with the toast cut into soldiers for dipping.
