Ingredients

1 tsp oil (sunflower or olive oil)
1 onion, chopped
1 clove garlic, chopped
1 tin plum tomatoes, chopped
4 fresh tomatoes, chopped
1 vegetable stock cube
1 pint hot water
Handful of basil
Seasoning

Handy Hint

i prefer to use Knorr as less salt than oxo cube

Method

Heat oil in pan.
Add onions and garlic, fry for two mins.
Add plum and fresh tomatoes and dissolve the stock cube in 1 pint of hot water in a jug, pour it in the pan with the tomatoes.
Simmer for 15 mins.
Tear basil into soup.
Simmer for 30 - 45 mins on low heat.
Blend with a hand blender and season to taste.

Serve with crusty bread
