IngredientsCouple of handfuls of lentils2 carrots 1 onion 3 cloves garlic 1 red pepper Tin kidney beans (or equivalent amount of dried) 2 handfuls sweetcorn 4 handfuls spinach 100g mushrooms 1 cup stock 1 glass red wine 2 tsp cocoa powder Olive or veg oil Chilli in any form (add as much or as little as you like) Herbs (I like oregano in chilli but use whatever) Canned tomatoes or passata |

MethodBoil lentils in water for 5-10 mins then strain.Chop veg as small or as chunky as you like In the same pan, fry the onion until opaque, add the other veg and garlic. Add wine, tomatoes, stock and lentils Add cocoa, chilli and other seasoning Add kidney beans and spinach towards the end of cooking time. Serve with rice or jacket potato.
