Ingredients

200g carrots
200g potatoes
200g sweet potatoes
200g courgettes
200g onions
1 tin chickpeas
50g chopped dried apricots
50g raisins
1 tin tomatoes
2tspn cinnamon
2tspn cumin
1tspn paprika
1 bunch coriander, finely chopped
harissa paste, to taste
couscous, to serve

Handy Hint

Chunks of braised lanb can also be added.

Method

Chop all the veg up into big chunks, put them in a big casserole pot with the chickpeas, dried spices, dried fruit and two cups of water.

Cook in a hot oven (180-200C) for 30 minutes, with the lid on. Remove pot, add the tinned tomatoes, and cook for another 20 minutes without the lid on in the oven.

When all the veg are cooked through and the sauce is thick and bubbling, add the chopped coriander and serve with lots of couscous. This is meant to be a very saucy dish so don't worry if it looks very liquidy.
