MethodChop all the veg up into big chunks, put them in a big casserole pot with the chickpeas, dried spices, dried fruit and two cups of water.Cook in a hot oven (180-200C) for 30 minutes, with the lid on. Remove pot, add the tinned tomatoes, and cook for another 20 minutes without the lid on in the oven. When all the veg are cooked through and the sauce is thick and bubbling, add the chopped coriander and serve with lots of couscous. This is meant to be a very saucy dish so don't worry if it looks very liquidy. | |||||||||||||||||||
