Ingredients

8 slices smoked salmon (pref not farmed - get me!)
Lemon
Pepper
Strong Irish Cheddar (tastes better - honest), sliced
1 loaf Wheaten bread or brown soda bread- like what Paul Rankin's knocking out via Sainsbury's and Waitrose
Guinness

Handy Hint

you can also drink the Guinness during the preparation.

Method

Squeeze lemon juice and grind some pepper onto smoked salmon slices. Leave for a few minutes.

Lightly toast some slices of wheaten bread.

Place a slice of smoked salmon on each piece of toasted bread.

Cover salmon with slices of cheddar.

Place under a hot grill until cheese has melted and bubbling and exposed edges of bread are slightly charring.

Serve.

Drink Guinness.

use as a light lunch, snack or starter any time of year. I only gave it a 5 for 'Success with Children' beacuse of the Guinness - otherwise our 6 year old loves it. What are we doing to them - we never had smoked salmon when I was 6!
