MethodBoil the pasta (tagliatelle is best or even better, French nouilles). 3 mins before the end of cooking time, add the eggs in their shell so that they are softly boiled.Drain the pasta, put on a plate, break the egg on top and cover with grated cheese - emmenthal is best but cheddar will do.
