Ingredients

100g smoked salmon or trout per person (trout is cheaper and works just a well)
75g pasta per person - fusilli or penne work well
Generous helping of broccoli
Generous helping of peas
Any other green veg your family will eat
1 tbsp double cream
1 small onion or shallot

Handy Hint

Add any veg you like, the sort of things that work in stir frys work well here. We always add peas as they're popular in our house, they're good for you and it's easy to keep a bag in the freezer for emergency veg!

Method

Chop the onion or shallot very finely, fry in a little bit of olive oil until soft. Meanwhile cook the pasta according to instructions on packet. Flake the smoked fish with a fork until it's in lots of little pieces and remove any bones that might have sneaked in. Cook the veg.
Add the cream to the pan with the onion in it and allow to bubble so that the cream thickens. Add the smoked fish. Combine this sauce with the pasta and green veg and mix it all up. Serve.

We used salmon and it was lovely, my dd's loved it even though they insisted before eating it they wouldn't.

Even my fussy 2 year old (and even fussier husband) wolf this one down and it's pretty healthy with oily fish and lots of veg. Little ones can help with flaking the fish - my DD loves doing this - and it's fast enough to make that even impatient toddlers can normally wait long enough.
