Ingredients

50g (2oz) icing sugar
175g (6oz) margarine
50g (2oz) cornflour
175g (6oz) plain flour
Icing sugar and colouring to decorate
Jam - optional

Method

1. Beat together icing sugar and margarine. Mix in cornflour and flour. If too sticky to roll out then shake in a little more flour
2. Roll out on floured board - fairly thin (depends how you like the biscuits and if you want to jam them together or just ice). Cut out shapes or small circles with a scone cutter and put on greased baking tray
3. Bake for around 15-20 minutes at 180C until just turning golden round edges
4. Cool then ice, or sandwich two with jam and then ice and decorate

Really nice and easy, the dough is quite soft though so you need to cut out your shapes quickly! I was attempting Christmas ones and my stars were a wee bit wonky. Biscuits were tasty and sandwiched together fine. Biscuits are very nice, but a little lighter in texture than most Empire biscuits I have tried. (not a bad thing just an observation.

Mmmmm these were yummy. The dough is a bit tricky for cack-handed toddlers to shape! (Resulting misshapen biscuits were light and buttery and gorgeous though).
