Ingredients1 brown onion, chopped
2 cloves garlic, bashed (skin on)
2 chicken breasts
Couple of handfuls of pitted jarred black olives
1 cup vegetable stock
1 tin chickpeas, drained
Chorizo sausage, sliced
Method1. Fry off the onion until starting to caramelise, put in the bottom of a casserole dish.
2. Add the chickpeas, vegetable stock and garlic.
3. Put the chicken breasts on top and tuck slices of chorizo and lemon and black olives around it to taste.
4. Drizzle some olive oil over the chicken, sprinkle on some paprika and season to taste.
5. Cover with foil and cook on 200C/Gas Mark 6 for 20 minutes.
