Ingredients

1 brown onion, chopped
2 cloves garlic, bashed (skin on)
2 chicken breasts
Couple of handfuls of pitted jarred black olives
1 cup vegetable stock
1 tin chickpeas, drained
Chorizo sausage, sliced
Lemon, sliced
Paprika
Olive oil

Method

1. Fry off the onion until starting to caramelise, put in the bottom of a casserole dish.
2. Add the chickpeas, vegetable stock and garlic.
3. Put the chicken breasts on top and tuck slices of chorizo and lemon and black olives around it to taste.
4. Drizzle some olive oil over the chicken, sprinkle on some paprika and season to taste.
5. Cover with foil and cook on 200C/Gas Mark 6 for 20 minutes.

In answer to Hobnob57 - You have to check packets but a proper chorizo will NOT contain dairy. My dd is allergic and she has chorizo. Tesco finest one is ok but their chorizo slices do contain milk. The best thing is to go to a good deli, they will have genuine ones.

Beware, there is dairy in chorizo! I was devastated when I found out.... Just gave up BF and am having my first chorizo in a year tonight!

I love this recipe, could eat it every week. So easy and no mess.
