Ingredients

570g (2 1/2 cups) porridge oats
113g (1/2 cup) flaked almonds (optional)
113g (1/2 cup) desiccated coconut or dried coconut slices
57g (1/4 cup) maple syrup
3 tbsp light brown sugar
3 tbsp melted butter
1/4 tsp salt
1 tsp cinnamon
1 tsp vanilla extract
57g (1/4 cup) raisins
57g (1/4 cup) dried sweetened cranberries or other favourite dried fruit

Handy Hint

The granola can be eaten on its own or with milk for breakfast, sprinkled over yogurt or ice-cream, and of course left out on a dish for Santa's reindeer on Christmas Eve (that's what we did and called it Reindeer Food). The almonds can be left out for those with a nut allergy or you can use chopped pecans, cashews, or other nuts. The same goes for the cranberries, you can substitute any other dried fruit.

Method

1. Pre-heat the oven to 150C/Gas Mark 2.
2. Combine all the ingredients except the dried fruit in a large bowl, mix thoroughly and place in a single layer on a non-stick or greased baking tray.
3. Place in the oven for 25 minutes or until golden brown. You will need to stir the granola mixture every 5 minutes.
4. Remove from the oven and allow to cool, then add the raisins and dried cranberries.
5. Store in an airtight container and it will last a week or two.
