Ingredients

6 eggs, beaten with a little milk
1 onion, chopped
1 handful button mushrooms, sliced
1 large potato, cut into small cubes
2 skinned/de-seeded tomatoes, chopped
1 green pepper, chopped
1 smoked sausage, sliced (optional)

Handy Hint

If you prefer, you can leave the eggs whole and just break them into the mixture and cook as fried eggs. No need to turn over - just spoon some hot oil over the top until set

Method

1. Fry onion in a little oil for a few minutes in a large frying pan
2. Add the potatoes and green pepper and cook with a lid on for 5 minutes until beginning to soften
3. Remove lid and add the tomatoes and mushrooms and cook until all soft
4. Add in smoked sausage if using and after a minute pour in the eggs
5. Cook and when nearly done place a plate on top and turn out, then slide back into pan to cook the bottom
6. Cut into portions and serve with salad and some crusty bread
