Ingredients6 eggs, beaten with a little milk1 onion, chopped 1 handful button mushrooms, sliced 1 large potato, cut into small cubes 2 skinned/de-seeded tomatoes, chopped 1 green pepper, chopped 1 smoked sausage, sliced (optional) |
Handy HintIf you prefer, you can leave the eggs whole and just break them into the mixture and cook as fried eggs. No need to turn over - just spoon some hot oil over the top until set |

Method1. Fry onion in a little oil for a few minutes in a large frying pan2. Add the potatoes and green pepper and cook with a lid on for 5 minutes until beginning to soften 3. Remove lid and add the tomatoes and mushrooms and cook until all soft 4. Add in smoked sausage if using and after a minute pour in the eggs 5. Cook and when nearly done place a plate on top and turn out, then slide back into pan to cook the bottom 6. Cut into portions and serve with salad and some crusty bread | |||||||||||||||||||||
