Ingredients

225g (8oz) sieved self-raising flour
110g (4oz) butter (Welsh if possible)
1 egg, slightly beaten
Handful of currants or sultanas
Milk if needed
75g (3oz) caster sugar

Handy Hint

These cakes are so quick and easy to make at short notice for teatime and are delicious eaten warm.

Method

1 In a bowl, rub the butter into the flour. Add the sugar and then the egg. Mix to combine and with your fingers bring together into a dough, using a splash of milk if required.
2 Roll out to 1/4 inch thick and cut into rounds using a biscuit cutter.
3 Rub a heavy-based frying pan with butter and wipe off the excess. Heat up on direct heat. Place a few cakes on the pan and cook for 2-3 minutes on each side till caramel brown.
4 Remove from pan and dust with caster sugar while still warm.

I think the fact that I made these at 11.30am and by 12.00 most of them had been eaten (and there are only 3 of us) speaks for itself!! A good way of filling up teenage boys.

Add 1tsp of mixed spice to the mixture and they will taste even more yummy. Also remember that you can make the dough and leave in the fridge to cook when you're ready. They only need 1-2 mins cooking on each side- and if you are being healthy I don't use butter in the pan just a non-stick pan. Doesn't make them any less tasty!
