Ingredients

4 eggs
300ml (half a pint/1 1/4 cups) cheese sauce
1/2 tsp French or Dijon mustard
25g (1oz) grated Cheddar cheese
1 tbsp grated Parmesan cheese
1 tbsp breadcrumbs

To garnish:
1 tomato, sliced
a few sprigs parsley (optional)

Handy Hint

Note: If liked, a 225g (8oz) packet of frozen spinach (leaf or chopped) can be cooked, following the instructions on the packet, drained well and placed in the dish with the eggs, and the sauce poured over the top.

Method

1. Hard boil the eggs, do not run under cold water but shell and cut in half. Lay in a shallow ovenproof dish and keep warm
2. While the eggs are boiling, make the cheese sauce. When ready, stir in the French mustard and pour over the eggs
3. Combine the grated cheeses and breadcrumbs and sprinkle over the eggs. Place under a moderate grill or broiler and cook until golden brown
4. Garnish with slices of tomato and sprigs of parsley (again, optional). Serve hot
