IngredientsThis can be done with or without the meat.
400g mince meat
1 large carrot -greated
1 large oninion (white or red)- finely chopped
1 large courgette -
1 large red pepper
2 handfuls of mushrooms
1 handful of cherry/plum tomatoes.
Salt and pepper to taste.
2 teaspoons of dried mixed herbs
2 cloves of garlic
250ml of beef stock ( or veggie if required)
1 Jar of tomotoes based sauce suitable for 4 people
MethodAdd oninions and tomatoes to a hot frying pan, then after about a minute add half the stock.
Add the mince to the pan and brown.
Once brown add the rest of the stock. and all the other ingredients.
Turn down to a low heat and allow to thicken.
