Ingredients

500g skinless and boneless white fish fillets or salmon fillets, cut length ways
2 tsp tandoori masala powder
1/4 tsp salt
1/2 tsp coarse black pepper
1 tbsp coriander and cumin powder
2 tbsp olive oil
1/4 can chopped or plum tomatoes
1 tbsp tomato puree
2 spring onions, chopped

Handy Hint

You can use oily fish like salmon, or white fish like coley, cod or haddock.

Method

1. Sprinkle all the spices over the fish and leave for 30 minutes.

2. Heat the oil in a large frying pan.

3. Add the tomatoes and tomato puree to the oil.

4. Shallow fry the fish in this oil and tomato base. Cook each side of the fish for 3-4 minutes then sprinkle with chopped spring onions and fresh lemon juice when done
