Ingredients

1-3 tbsps oil
4 chicken breast fillets (cut into bitesize pieces)
½ an onion (finely chopped)
75g raisins or sultanas
1 165ml tin of coconut milk
2 tbsps cream (optional)
A handful of mixed, chopped nuts (optional)
1 tsp turmeric
2-4 tbsps sugar
2-3 cardamom pods
1-2 cloves
½ inch piece of a cinnamon stick
½ tsp ground coriander powder
Glug of oil for frying

Handy Hint

Do NOT add salt, or garlic! This dish is slightly sweet so add sugar according to how you like it. The longer you cook it the darker colour the sauce takes on so if you want to have a bright creamy yellow sauce then don't cook it much after you added the cream.

Method

1. Heat the oil in a large pan or work and add the onion.
2. Begin to cook the onion over a low to medium heat and add the spices (turmeric, cardamom, clove, cinnamon, coriander) and half of the raisins or sultanas.
3. Add the chicken to the pan and mix it round for a few minutes. Add a small amount of water, cover and cook for about 10 minutes.
4. Next, add the coconut milk, cream and the remaining raisins or sultanas and the nuts.
5. Bring to the boil and the simmer on a low heat. Add the sugar and continue to simmer on low until the sauce has thickened and chicken has cooked through.

I once stayed up all night preparing lots of dishes for a Indian style buffet lunch/dinner for my family and THIS (chicken korma) was the most popular dish!
