Ingredients1 kg shoulder of lamb (cubed on the bone)1 large onion Salt 5 tbsp oil 2 tbsp grated ginger 1 tbsp crushed garlic 1 tbsp garam masala 1 tbsp coriander powder 1 heaped tsp cumin powder 4 fresh tomatoes (cubed) 4 heaped tbsp natural yogurt 1 tsp turmeric powder 1 tbsp mild paprika 1 tsp chilli flakes or powder Handful of fresh chopped mint leaves |
Handy HintAdd vinegar to tenderise the meat. |

Method1. Add oil and onions to a pan, cook till slightly golden.2. Add the meat and cook for 5 minutes, then add ginger, garlic, salt and all the other spices. 3. Cook for a minute then add the yogurt and tomatoes and a splash of water. Mix well, cover with a lid and cook on slow for 1 hour then garnish with chopped mint. | |||||||||||||||||||||
