Ingredients4 eggs (beaten)4-5 spring onions (finely chopped) 15g bunch of coriander (chopped) 15g bunch of parsley (chopped) 100g halloumi cheese (grated) Salt and freshly ground pepper (to taste) Sunflower oil |

Method1. Beat the eggs lightly and mix in the rest of the ingredients.2. Heat a heavy bottomed 8" frying pan with a little oil and pour in the mixture. Cover with a glass lid if possible and leave on a low heat. 3. Don't open the lid and let it cook until the middle is almost set. Carefully slide out onto a plate and flip it back in the pan to cook the other side. 4. Cook for a few more minutes on a low heat. 5. Slide out onto a plate lined with kitchen paper.
