Ingredients

4 eggs (beaten)
4-5 spring onions (finely chopped)
15g bunch of coriander (chopped)
15g bunch of parsley (chopped)
100g halloumi cheese (grated)
Salt and freshly ground pepper (to taste)
Sunflower oil

Handy Hint

Excellent as a sandwich filler with sliced beef tomatoes

Method

1. Beat the eggs lightly and mix in the rest of the ingredients.
2. Heat a heavy bottomed 8" frying pan with a little oil and pour in the mixture. Cover with a glass lid if possible and leave on a low heat.
3. Don't open the lid and let it cook until the middle is almost set. Carefully slide out onto a plate and flip it back in the pan to cook the other side.
4. Cook for a few more minutes on a low heat.
5. Slide out onto a plate lined with kitchen paper. Cut into wedges and serve.
