Ingredients

6 green apples, diced
250g frozen mixed berries
¼ cup Demerara sugar (or granulated)
1 cup plain flour
100g unsalted butter
1 cup brown sugar
1 packet vanilla sugar
1/2 cup muesli of choice

Handy Hint

You can swap the berries for rhubarb.

Method

1. Cook apples with 1 tbsp of sugar in a saucepan, just enough to soften them.
2. Pour into an ovenproof dish and add the berries. Mix the demerara sugar with vanilla sugar and sprinkle over the fruit. (You can add extra around the edges of the dish so that the sauce caramelises when cooking.)
3. In a separate bowl, rub the butter into the flour, using your fingertips, until it resembles breadcrumbs. Mix in 1 cup of sugar and the muesli and sprinkle it over the fruit.
4. Place in 200C oven for 50 mins or until golden brown.
5. Serve hot with ice cream or single cream or custard
