Ingredients

100 g carrots
100 g fresh spinach
3 tbsp olive oil
1 handful of peas
1 teaspoon chopped parsley
80 g ham
4 large eggs
2 tbsp flour
1/2 an onion
50 g grated Parmesan cheese or Cheddar cheese
50 ml milk

Method

Fry the onion with the olive oil until translucent. Add the spinach, the finely shredded carrots and peas and cook until soft. Turn the heat off.
Then add the eggs, parsley, flour, chopped ham, milk, cheese and stir well.
Lay a sheet of baking paper on a tray. Grease some pastry cutters shapes with oil and lay them on the paper.
Pour some mixture inside each cutter.
Cook in a pre-heated oven at 180 C for 20 minutes.
Carefully take the frittatas off the cutters and serve them to your hungry little soldiers! Hope they enjoy them, mine did!
