Ingredients

2 eggs
1 egg yolk
100g pre-cooked rice noodles
50g smoked salmon
25g fresh ginger, sliced into matchsticks
1/2 tsp dried chilli flakes
1 tsp fresh lime juice
1 tbsp roasted sesame oil
pinch of salt

Handy Hint

Take the eggs off the heat before completely cooked as they will finish cooking in their own heat in the plate

Method

1) Toss the smoked salmon in the heated oil, remove and put aside.

2) Using the same pan, cook the rice noodles on a high heat until crispy. Use a fish slice to pat them down and place on a warm plate.

3) Beat the eggs and yolk with a fork and add salt to seson. In the same pan cook the eggs on a moderate heat and pour onto noodles just before completely set. Sprinkle with chilli flakes, ginger, lime juice and smoked salmon. Serve immediately.
