Ingredients

1 cup Bran
1 cup SR. Flour
3/4 cup Brown Sugar
1/3 cup of oil
1 small tub of sour cream or plain yogurt
1/4 teaspoon Bicarbonate of Soda
1 beaten Egg

Handy Hint

Use real Bran from a health food shop rather than the supermarket variety, as that can spoil the results.

Method

Mix all the dry ingredients together and then mix in all the wet ones. Spoon into cake cases and bake in the oven just the same as cup cakes.

Depending on your oven, they can take 10-20 mins to bake. Just skewer to make sure they are not wet inside.

My gran used to make this recipe with me most weekends when I was a child; as a healthier alternative to making cup cakes. Sometimes as a treat we would cut a warm one in half and have it with a little butter. I think this was passed down to her from my Great GrandMother. I have a scanned copy in my Gran's hand-writing that was given to me after she passed away.
